
Cooking Challenge - Eating Healthy
We always want to encourage people to eat as healthily as possible, but sometimes that is easier said than done, especially when you don't have a lot of time, or money. So we decided to make that the main focus of this challenge to try and show people that eating healthy meals that are still quick, easy, and tasty isn't as hard as you might think.

A Tasty Breakfast
Replacing bread with rice cakes worked for a lower carb breakfast, and adding sliced avocado and a poached egg meant good fats, protein, and plenty of energy to start the day the right way.

Using Up The Leftovers
Another way to kick your morning off is using up the leftover fruit in the bowl to add a kick of sweetness to some warming porridge, rather than reaching for the sugar.

Anytime Snack
Some banana and blueberry spelt muffins topped with a plum and blueberry compote.

Healthy take on a Classic
Make a quiche that bit better for you by ditching the pastry and making it crustless. This one was made with eggs, cheese, tomatoes, onions and herbs including wholegrain mustard. But adding ham, beetroot, broccolli, just about anything really, works with a quiche. All served with a colourful salad.

Quick Lunch
One thing our challengees found is that rice cakes are very versatile! In this case we have bell peppers and cherry tomatoes on top of some cream cheese. But we also saw avocado and hummus, tuna and mayo, and even yoghurt and fruit.

Italian Goodness
What healthy eating challenge would be complete without a pasta dish? Some fusilli, onions, orange peppers, and mushrooms, served on a bed of saladm that interestingly included an apple, which I am told worked very well with the pasta dish!
